Russ Cohen
Environmentalist and wild foods enthusiast

Learn to eat your way through the woods with the help of professional environmentalist and wild foods enthusiast Russ Cohen. Russ Cohen is the author of “Wild Plants I Have Known … and Eaten” published by the Essex County Greenbelt Association. Russ provides a practical guide to foraging in the forest for wild edibles, covering seasonal availability, methods of preparation, nutritional value, and guidelines for ecologically responsible and safe foraging. Learn how to put such well known invasive plants as Japanese knotweed or garlic mustard to culinary use – strawberry-knotweed pie anyone?
